S’mores Rice Krispie Treats

I have a love/hate relationship with Labor Day Weekend. Love, the long weekend – any long weekend. Hate, the end of summer. Love, the start of college football. Hate, that it is still 100 degrees yet there is pumpkin spice every where we look.

This is a recipe that I have made a handful of times through the years and always only for a celebration of sort. My friends will certainly recognize it. It combines my two VERY favorite sweets, Rice Krispie Treats and S’mores.

S’mores Rice Krispie Treats

Ingredients

5 c. Kellog’s Rice Krispies*

4 c.  Golden Graham’s

4 Tbs. Butter (1/2 of a stick; save the butter wrapper*)

1 package of Jet-Puff Marshmallows (10-12 oz. for melting, save a cup and a half for later)

1/4 c. semi sweet chocolate chips

IF you can find miniature marshmallows, like the kind that go in hot chocolate add them!

Directions

I always make my rice krispie treats in the microwave in a big glass bowl. It makes these so fast and makes for much easier clean up. Microwave marshmallows and butter for 3 minutes, stirring after 2.

Combine both cereals with melted butter and marshmallows .

  

Let cool for 3-4 minutes.

Add chocolate and extra marshmallows.

   

 

Put mixture in an 11×15 baker. Now use your butter “wrapper” for greasing your pan then pressing your treats in place.

There is really not a right or a wrong way to make these. They will be a hit regardless. But I do recommend name brand rice krispies and marshmallows, I have tried to go grocery store brand once for rice krispie treats, and it was absolutely not worth the less than one dollar savings.

Brown Sugar Fruit Dip

Both of us grew up with this fruit dip, our mom used to make it often and it’s always been a crowd pleaser. Not to mention it takes only three ingredients and less minutes to whip up. Excellent with strawberries (pictured) and cantaloupe but could be used to encourage anyone (I’m including myself here) to enjoy all of the spring and summer fruit!





Brown Sugar Fruit Dip

16 oz. Light Sour Cream**

3 Tbs. Dark Brown Sugar

1 tsp. Vanilla

Stir, serve. Really, that’s all. It’s almost embarrassing.

**To cut calories you can use 1 small container of light sour cream with one small container of fat free Greek yogurt, but I do not recommend all yogurt — but really it’s already light sour cream
